Fresh Oysters with Cilantro Lime Caipirinha Granita

  • 6 oz.
    Cachaça, premium, Brazilian
  • 2 ea.
    Limes, cut into wedges
  • 2 Tbsp.
    Cilantro, finely chopped
  • 1 1/2
    Sugar, just enough to balance fruit flavors
  • to taste
    Black pepper, freshly cracked
  • to taste
    Sea Salt


  1. Place the lime wedges, sugar, and chopped cilantro in a bowl and muddle well or use a food processor. Add the Cachaça, salt and pepper and mix it well then pulse it.
  2. Place it in a shallow pan and freeze it, scraping with a fork every hour until it is completely frozen and fluffy.
  3. To serve, place a spoon full of the granite over the oyster.
  4. Garnish with sprigs of micro cilantro.
