Fresh Oysters with Star Fruit and Kiwi Caipirinha Granita

Ingredients

Cachaça, premium, Brazilian

Kiwi, peeled and chopped

Star fruit, seeded and chopped

Sugar, just enough to balance fruit flavors

1 Tbsp.
Pineapple sage, finely chopped

Black pepper, freshly cracked

Method
Star fruit and kiwi brunois, as garnish, seasoned with salt and pepper
- Place the lime wedges, sugar, and chopped cilantro in a bowl and muddle well or use a food processor. Add the Cachaça, salt and pepper and mix it well then pulse it.
- Place it in a shallow pan and freeze it, scraping with a fork every hour until it is completely frozen and fluffy.
- To serve, place a spoon full of the granite over the oyster.
- Garnish with sprigs of micro cilantro.
